20 cl Sherry Dry Sherry

Procedure
Serve with ice cubes in a suitable glass. Pour the sherry and cava into the glass respectively. Twist the lemon peel over the drink so that it releases its oil, and place it on a cocktail stick together with a good olive and put it in the glass. Serve immediately!

Procedure

Ingredients

Cava Reserve

Pomegranate syrup (90ml sugar, 90ml water, 180ml pomegranate juice)

Crushed ice

Garnish (4x6 tsp. pomegranate seeds, a few drops of green food coloring in each glass, possibly rosemary sprigs)
Procedure
Prepare the pomegranate syrup by gently heating the sugar and water in a small saucepan until the solution begins to boil. Remove the saucepan from the heat, add the pomegranate juice, leave to cool and then refrigerate until ready to use. Blend the sugar and a few drops of green food colouring until the desired colour is achieved. Pour some of the pomegranate syrup into a saucer and pour the green sugar onto a plate. Lightly dip the rims of 6 cocktail glasses in the syrup, then dip the syrup-coated rims in the sugar. Swirl the glasses so that the entire rim is covered. Pour the Cava into the glasses to a level 1.5 cm below the sugar rim. Add 2 tsp. syrup to each glass and top with pomegranate seeds and ice.
