Organic straw yellow cava with golden hues. Fruity and straightforward on the nose, with lively aromas of ripe white pears and Golden Delicious apples, and hints of citrus and herbs. Crisp, precise and full-bodied on the palate, with a good core, excellent mineral undertones, a frothy mousse and lovely length and impeccably balanced finish. A perfect match for example. Oysters, savoury snacks or on the rocks for the Queen's New Year's speech

1 x Forns Raventos Nodal Gran Reserva Brut Nature is a serious organic cava made from Macabeu (30%) | Pinot noir (10%) | Xarello (60%) . In the glass, a clean and light color with golden tones, fine and persistent bubbles. The nose smells discreetly of hazelnuts and melon. The mouth is dry and complex with a hint of petroleum notes like ripe Riesling. Good acidity and a slight phenolic bite at the end. A perfect match for fish soup, lobster bisque, mushroom risotto, grilled fish or pink meat.

1 x Miquel Pons Reserva Semi-Sec (added 32-50g. sugar/l). Sparkling and creamy bubbles and the taste is immediately light and sweet with notes of lightly baked pear and apple and a touch of toast. This is the cava that is perfectly matched to the wreath cake or to toast the New Year with at midnight. Made from Macabeu (40%), Xarello (55%) and Parellada (5%). Aged for 18 months.
