Ingredients:
100 g. smoked cheese, 2 tbsp. creme fraiche 18%, skyr or Greek yogurt, A small red onion, 1 tbsp. chopped lovage, 1/2 cucumber, 1/2 bunch of radishes, Salt and freshly ground pepper, 4 slices of good rye bread, Sorrel or chives for garnish, Serve with a glass of cava reserva.
How to do it:

Stir together the smoked cheese and crème fraiche until completely smooth and creamy.

Add finely chopped onion, lovage and season with salt and pepper.

Finely chop cucumber and radishes.

Cut the rye bread slices into bite-sized pieces and toast in the oven or on a toaster.

Toss cucumber and radishes in the smoked cheese cream and serve on the cooled, toasted bread.

Garnish with sour cream or chives and serve with a glass of good cava.
Tip:
Also try serving with a little hot smoked salmon, or a slice of new, boiled and cold potatoes, perhaps as a piece of good open sandwiches on whole, crispy, toasted rye bread.
